Roasted Brussels Sprouts with Bacon and Halloumi

Roasted Brussels Sprouts with Bacon and Halloumi

As a family, we are trying to eat more brussels sprouts, even though they aren’t our favorite vegetable. I grew up on them being boiled, soggy, and somewhat bland so I never really wanted to try cooking with them as an adult. In the last several years I have had some really delicious brussels sprout recipes, which then made me want to cook them at home. I have found that my favorite cooking method for them is roasting. I’ve never tried Halloumi cheese but it has been on my “must try” list for sometime, so when I found this recipe on The Girl on Bloor, I knew I had to give it a try. It was a really easy recipe that took less than 30 minutes to make. The brussels sprouts were tender and caramelized and the bits of bacon and crisp halloumi cheese not only added great flavor but texture as well. This one is a keeper.

  1. We love brussel sprouts but generally I only cook them for about 5 mins in boiling water. This sounds like a winner but not sure I get Halloumi cheese here I will have to find a substitute. Have a good weekend Diane

  2. Bacon in sprouts always makes my menfolk happy! I usually add minced garlic, but cheese of some sort (I’ve never tried Halloumi) sounds like a great addition, too!
