Baked Berries with Lemon Curd and Coconut Topped with Homemade Whipped Cream

Baked Berries with Lemon Curd and Coconut Topped with Homemade Whipped Cream

We had friends over for dinner and I wanted to make a light and tasty dessert with what I had on hand. I decided to toss together some strawberries, raspberries, and blueberries with some warm lemon curd and coconut. I baked the mixture then served it warm with homemade whipped cream. This dessert was wonderful – light, tart, sweet, and creamy. It was great on its own or it would be wonderful over pound cake too. It was a big hit with all of us, especially my daughter, who LOVED it!

  1. I’ve baked berries with lemon curd before and they are AMAZING that way. I am loving the coconut in your version as well.

  2. Pile those berries in a crust, call it a pie, and you have yet another delightful summer dessert! Either way, it looks marvelous. The only question is, how did you refrain from eating all of the berries before you baked it?

  3. Pam,
I love this recipe. I am getting the berries and lemon curd today!!!! Perfect for me right now as I am trying to shed the winter pounds. I love berries and dessert. This is such a healthy combo for the whole family! I will skip the whipped cream for myself!! !Thanks for your recipes.

  4. I made this recipe using the frozen berry mix from Costco (and yes, my 8-month old daughter and I had to get the Hep A vaccination a few days later) and it was great! Looking forward to making it with fresh (non-contaminated) berries next time! Thanks for the recipe!
