Coconut, Macadamia Nut, and White Chocolate Banana Bread

I love making banana bread and I love the combination of coconut, macadamia nuts, and white chocolate, so I decided to combine them together and make this bread.  It had a fantastic combination of flavors and textures and was so moist and delicious.  This bread was a huge hit with my kids – they both gave it a double thumbs up.

  1. Pam,
I made this today and it came out great! I omitted the nuts, because I didn’t have any. I also used light butter and egg beaters just to keep it lighter. Great recipe. I use at least one of your recipes almost everyday. Keep them coming!!!

  2. Will it affect the recipe if i omitted the coconut? I have a friend whos allergic to coconut but not macadamia nuts. I would really like to make it for her as she really wants to try this, minus coconut because it looks absolutely fabulous.

I only have all purpose flour until i can get to the store and buy whole wheat flour, is that ok or should i wait until i get whole wheat flour?

    Sincerely an eager beginniner cook
