Berry Banana Bread

I had two very ripe bananas to use up along with some frozen fruit in the freezer, so I decided to bake a loaf of berry banana bread. I was lucky enough to be sent a couple of bottles of X-agave and decided to use it instead of sugar for this berry banana bread recipe from their X-agave cookbook. This berry banana bread took a while to bake, but it turned out moist, delicious, and jam-packed with berries. The kids and my husband really loved this bread.
Berry Banana Bread
Ingredients:
- â…” cup X-agave (you can also use agave, honey, or maple syrup)Â Â
- 2 very ripe, mashed bananas
- ½ cup butter, softened
- ¼ cup milk
- 1½ tsp vanilla extract
- 2 eggs
- 2 cups whole-wheat flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup of frozen blueberries
- ½ cup frozen blackberries
- ½ cup frozen raspberries

How to Make Berry Banana Bread
Preheat the oven to 325 degrees. Coat a 9×5 loaf pan with cooking spray.
Using a hand mixer (or stand mixer), beat the X-agave, bananas, butter, milk, vanilla, and eggs.
In a separate bowl, carefully combine the baking soda, salt, and whole-wheat flour.
Slowly add the dry ingredients to the wet ingredients, mixing well.
Add most of the frozen berries and mix quickly and carefully.
Pour the batter into the prepared pan, then top with the remaining berries.
Bake for 60-75 minutes or until a tester inserted in the center comes out clean.
Cool on a wire cooling rack for 10 minutes before slicing. Serve plain or slathered in butter. Enjoy.

what is xagave? can i sub sugar? also, isn’t 2 cups of fruit an awful lot? i usually use 1 cup.

X-agave is a natural sweetener. You can use honey, sugar, or maple syrup if you’d prefer.
