Peanut Butter, Oatmeal, and Chocolate Chip Cookies

My dear friend Currié gave me this recipe, and my kids and I were so excited to make these cookies together. They were extremely easy to make and tasted so delicious. I loved the peanut butter flavor with the chocolate chips. They were fun to make and disappeared quickly–my kids and my husband, really, really liked them.

Peanut Butter, Oatmeal, and Chocolate Chip Cookies

Ingredients:

  • ½ cup butter, melted and cooled
  • cup granulated sugar
  • cup firmly packed light brown sugar
  • ½ cup peanut butter (smooth or chunky)
  • 1 egg, room temperature
  • ½ teaspoon vanilla
  • 1 cup all-purpose flour
  • 1½ teaspoon baking soda
  • Pinch of salt
  • 1 cup old-fashioned oatmeal, uncooked
  • ¾ cup chocolate chips

 

How to Make Peanut Butter, Oatmeal, and Chocolate Chip Cookies

Preheat oven to 375 degrees.

Using a hand mixer, beat the butter and white & brown sugars in a large mixing bowl until fluffy.

Add peanut butter, beating well until thoroughly combined, scraping down the sides of the bowl with a rubber spatula.

Add egg and vanilla, then mix until smooth.

In a small bowl, stir together flour, baking soda,  and salt.

Gradually add to the cookie dough,  and mix just until blended.

Stir in the oatmeal and chocolate chips.

Scoop balls of cookie dough and place 2 inches apart on ungreased cookie sheets.

Place in the oven to bake for 8 to 10 minutes, or until cookies are lightly browned.

Remove from the oven and let cool 5 minutes before moving to a wire cooling rack. Enjoy.

  1. I made these today for the first time and they truly are delicious!!!! I was worried about my kids eating them with the oats but they gobbled them up. I like the substance and that they are not toooo sweet. A keeper for sure!
