This recipe is a result of me being super lazy and not wanting to go to the grocery store. I looked through the refrigerator and pantry to find something for dinner. Luckily, I had some dinner rolls, chicken breasts, blue cheese dressing, and hot sauce. I served these buffalo chicken sliders with a green salad and oven baked sweet potato fries. It was a super quick and easy meal to throw together during the week and we all thought these sliders were tasty.
Cut the thin portion of the bottom couple inches of the chicken breast off. Cut each remaining portion of the chicken breast in half lengthwise.
Place the 6 chicken pieces into a large zip lock bag and pour the hot sauce over the top. Seal and mix until the chicken is evenly coated with the hot sauce. Place into the refrigerator for 6-8 hours.
Once you are ready to eat, remove the chicken from the refrigerator 20 minutes prior to cooking it. Heat a large skillet over medium high heat. Coat the skillet with cooking spray then add the chicken pieces to the HOT skillet, then season with sea salt and freshly cracked pepper, to taste, if desired. Cook for 3-4 minutes then flip over and cook for another 2-3 minutes, or until chicken is completely cooked through.
While the chicken is cooking, warm up the dinner rolls in the oven for a few minutes.
Place a piece of the lettuce on the bottom half of the dinner roll followed by a piece of chicken and a dollop of blue cheese dressing. Top with remaining half of the dinner roll. Serve immediately with extra hot sauce on the side. Enjoy.
