Zucchini and Tomato Sauté with Cotija Cheese and Cilantro

I was making a Southwestern flavored meal for dinner and wanted to pair it with a simple veggie side dish. This zucchini and tomato sauté with cotija cheese and cilantro recipe was a nice change of flavors that tasted nice together and it paired well with the rest of the meal.

How to Make Zucchini and Tomato Sauté with Cotija Cheese and Cilantro

Heat the olive oil in a large skillet over medium heat. Add the onions and cook, stirring often, for 3 minutes.

Add the tomatoes and cook, stirring occasionally for 2 minutes.

Add the diced zucchini and cook, stirring occasionally, for 3-4 minutes, or until the zucchini is fork-tender and the tomatoes are close to bursting.

Add the minced garlic and season with sea salt and freshly cracked pepper, to taste. Cook, stirring constantly,  for 1 minute.

Pour the veggies into a serving bowl then top with cotija cheese and fresh cilantro. Serve immediately.

  • ¼ sweet yellow onion chopped
  • 1 cup grape tomatoes
  • 1 small zucchini chopped
  • 1 clove of garlic minced
  • Sea salt and freshly cracked pepper to taste
