Lemon Garlic Baked Chicken Drumsticks

I wanted a simple to prepare dinner that I could make using what I had on hand. I had some chicken drumsticks that needed to be cooked up along with lemon, garlic, and olive oil. I marinated the drumsticks in the lemon marinade for several hours before seasoning them and browning them on the stovetop before moving them to the oven to bake. The chicken turned out delicious! It was tender, moist, and flavorful. My family squeezed a little extra lemon on their chicken before eating but I liked mine the way it was. I served this chicken with the Orzo with Garlicky Roasted Tomatoes and Parmesan and some lemon broccoli for a healthy and delicious meal that we all enjoyed.

How to Make Lemon Garlic Baked Chicken Drumsticks

Combine the lemon juice, zest, olive oil, and minced garlic together in a large ziplock bag. Add the chicken and seal the bag then mix until it’s evenly coated. Place into the refrigerator to marinate for several hours.

Remove the chicken from the refrigerator 30 minutes prior to cooking. Preheat the oven to 400 degrees.

Heat a large OVEN PROOF pan that’s been coated in cooking spray over medium-high heat. Remove the chicken from the bag and place it on a plate. Season both sides of the drumsticks with sea salt and freshly cracked pepper, to taste. Add the chicken to the HOT pan and cook for 3-4 minutes, or until golden brown. Flip the chicken over and place it into the oven to bake for 25-30 minutes, or until the chicken is cooked through. Serve with extra lemon wedges if desired. Enjoy.

Ingredients

  • Juice and zest from 1 lemon about 2 tbsp juice
  • 2 tbsp olive oil
  • 3 cloves of garlic minced
  • 6 chicken drumsticks
  • Sea salt and freshly cracked pepper to taste
  • Extra lemon for serving if desired
