I hope everyone had a wonderful Thanksgiving. One of my favorite ways to use up leftover turkey is to make a batch of soup. I make a broth from the turkey carcass that has simmered for several hours. I used leftover turkey meat along with veggies, fresh spinach, and orzo in this soup. It turned out so comforting, delicious and flavorful. There is seriously nothing better than homemade soup made from homemade broth. I served this soup with freshly baked bread and my house salad for a healthy and delicious meal.
Prepare the broth. Use this recipe but instead of a chicken carcass use the leftover turkey carcass.
Heat the olive oil in a large Dutch oven over medium heat. Add the onion, carrot, and celery; stir often for 2 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Add the broth and leftover turkey then season with sea salt and freshly cracked pepper, to taste (if needed). Cover with a lid and let the soup simmer for 30-40 minutes, stirring occasionally.
Add the orzo and simmer for 15 minutes. Add the spinach right before serving. Taste and re-season if needed. Enjoy.
