Balsamic, Garlic, and Basil Marinated Chicken Breasts
My sister requested that I make up a balsamic marinade for chicken breasts so here it is Dana. I adapted a recipe from Eating Well that looked simple and delicious. I let the chicken marinate for 24 hours and then cooked it on the grill. The chicken turned a nice brown color from the balsamic vinegar and it turned out juicy and so flavorful! I really loved the sweetness from the balsamic vinegar and the basil and garlic flavors made the chicken extra tasty. I served it with a delicious cucumber salad which will post tomorrow for a healthy and tasty meal.
Combine the olive oil, balsamic vinegar, garlic, basil, sea salt, and freshly cracked pepper, to taste, together in a large zip lock bag. Mix until well combined then add the chicken breasts to it, seal and place into the refrigerator for 2-24 hours.
Remove the chicken from the refrigerator 20 minutes prior to grilling.
Coat the grill rack with cooking spray then heat on high. Season both sides of the chicken with sea salt and freshly cracked pepper, to taste then place the chicken on the grill rack and cook 4-6 minutes per side or until cooked through and the juices run clear. Let the chicken rest for 5-7 minutes before slicing and serving with a little more chopped basil sprinkled on top. Enjoy.
