Pizza with Ricotta, Grape Tomatoes, Red Onion, and Fresh Basil

This quick and easy pizza with ricotta, grape tomatoes, red onion, and fresh basil was the perfect dinner while we were busy packing boxes for our move. I really, REALLY, loved how creamy the ricotta made this pizza–it tasted rich and decadent without any guilt. This tasty vegetarian pizza recipe was a big hit with all of us, and it paired nicely with a huge Italian salad.

Pizza with Ricotta, Grape Tomatoes, Red Onion, and Fresh Basil

Ingredients:

  • Olive oil cooking spray
  • Cornmeal
  • 1 ball of pizza dough
  • 1 cup of pizza sauce 
  • 1-2 cups of mozzarella cheese, shredded
  • 2 tbsp Parmesan cheese, shredded
  • ¼ cup of ricotta
  • 1 clove of garlic, minced
  • Handful of grape tomatoes
  • Red onion slices, sliced very thin
  • Sea salt and freshly cracked pepper, to taste

Serving:

  • 6-7 fresh basil leaves, chopped
  • Fresh parmesan, grated

How to Make a Pizza with Ricotta, Grape Tomatoes, Red Onion, and Fresh Basil

Preheat the oven to 425 degrees. Spread dough on a pizza sheet that has been coated with olive oil cooking spray and a sprinkle of cornmeal.

Spoon the sauce on the dough and spread evenly.

Sprinkle the mozzarella cheese and Parmesan cheese.

Mix the ricotta cheese with the minced garlic, then season with sea salt and freshly cracked pepper to taste, and mix.

Add dollops of ricotta all over the pizza.

Next, add the grape tomatoes and red onions. Season the top of the pizza with sea salt and freshly cracked pepper, to taste.

Place in the oven and bake for 15-20 minutes or until cheese is bubbling and the crust is golden brown.

Add fresh basil and serve with parmesan. Enjoy.

  1. That looks great! I so miss having a Trader Joes, last year I moved to the middle of nowhere- no Trader Joes in our whole state 🙁 We do have a bakery that makes some excellent pizza dough though, I'm excited to give this a try!
