Caprese Baked Eggs
This is my new favorite breakfast. I know I say that a lot, but I really, really, mean it this time. This is a quick and simple recipe to prepare and it tasted so delicious! I loved the flavor of the basil with the cooked tomatoes and the over easy egg. I served my egg with a piece of rustic bread for dipping into the yolk. I highly recommend this healthy recipe.Caprese Baked Eggs: Recipe and photos by For the Love of Cooking.net
- Cooking spray
- Mozzarella cheese
- 2-3 grape tomatoes sliced in half
- Fresh basil, chiffonade
- 1 egg
- 1 tsp milk (I used fat free but cream would make it richer)
- Sea salt and freshly cracked pepper, to taste
Preheat the oven to 350 degrees. Coat a small ramekin with cooking spray.
Place a couple of tomatoes, some mozzarella cheese, and basil into the ramekin. Crack an egg into the ramekin, being careful not to break the yolk. Add the milk, a few more tomatoes, a little more mozzarella, and basil to the top. Season with sea salt and freshly cracked pepper, to taste.
Place onto a baking tray and cook for 5 minutes; Turn the oven to broil and cook for another 5 minutes or until the whites are set but the yolk remains soft. Remove from the oven and serve immediately. Enjoy.
