Cinnamon, Oatmeal, Raisin, and Walnut Cookies
I wanted to make some cookies for a friend so I used this recipe I found on Smitten Kitten. It was a super quick and easy recipe to make and they smelled so good while they baked. My daughter and son taste tested them for me (tough job) and they said they were soft, chewy, and delicious. - 1/2 cup of unsalted butter, softened
- 2/3 cup light brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup of all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 1/2 cups of rolled oats
- 1/2 cup raisins
- 1/2 cup of walnut pieces
Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.
In a large bowl, cream together the butter, brown sugar, egg, and vanilla until creamy and smooth. Whisk the flour baking soda, salt, and cinnamon together in a separate bowl. Slowly add the flour mixture to the butter and sugar mixture. Stir in the oats, raisins, and walnuts then mix until combined.
Place dough by the spoonful onto the silpat mat. Bake in the oven for 10-12 minutes or when the cookies are golden at the edges. Let the cookies sit for a minute before moving them to a rack to cool.
