Ingredients
1tbspbutter
1tbspflour
½cupwhole milk
½cuptomatoesseeded & diced
1can green chilesmild or spicy
1 ½cupssharp cheddar cheeseshredded
1 ½cupsMonterey Jack cheeseshredded
Instructions
Heat the butter in a large skillet over medium heat.
Add the flour and whisk for 1 minute.
Slowly add the milk while whisking continuously until smooth and creamy, about 3 minutes.
Add the diced tomatoes, green chiles, cheddar cheese, and jack cheese until the mixture is completely combined and smooth (except for the tomatoes & green chiles).
