Ingredients
Almond Cookies:
1cupunsalted butterroom temperature
¾cupwhite sugar
1tspalmond extract
2cupsflour
½tspbaking powder
¼tspsalt
Almond Glaze:
¾cuppowdered sugar
½tspalmond extract
4-5tspmilkto taste
Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Make the cookies by beating the butter, sugar, and almond extract with a hand mixer until creamy and smooth.
In a separate bowl, whisk the flour, baking powder, and salt until well combined.
Add the flour mixture to the butter mixture 2 tablespoons at a time (important!!) until completely combined.
Drop tablespoon-sized balls on the cookie sheet a few inches apart.
Flatten them slightly with the palm of the hand.
Place into the oven and bake for 7 minutes, they will not look done.
Remove from the oven and immediately place a few almond slices on each cookie.
Allow the cookies to cool for a few minutes on the baking sheet before moving them to cool completely on wire racks.
Make the glaze by combining the powdered sugar, almond extract, and milk together until creamy and smooth.
Once the cookies have cooled completely, place the rack of cookies over parchment paper and drizzle frosting with a spoon on top of each cookie, to taste.
