Chocolate Chip Cheesecake Brownies

My daughter’s school friends have occasionally enjoyed trying her school lunch treats over the past 5 years and she recently told me that a lot of kids in her grade wanted me to bake them something. She took a poll for what they wanted me to make and mini cheesecakes and brownies seemed to be the favorites. I decided to compromise and found a recipe on What’s Gaby Cooking for these chocolate chip cheesecake brownies that looked like they might please everyone. The brownies were fun to make, smelled AMAZING while they baked, and took a lot of self-restraint to leave them alone. My daughter took them to school today to share with everyone at lunch and they were a big hit with all of the kids. I love it when that happens.

How to Make Chocolate Chip Cheesecake Brownies

Preheat the oven to 350 degrees. Line a 9×9 baking pan with parchment paper then coat with cooking spray.

Prepare the brownies by melting the butter and chocolate together in a saucepan over low heat, constantly stirring, until melted. Remove from the heat and whisk in the sugar, eggs, and vanilla extract until smooth and shiny.  Add the flour and stir with a rubber spatula until combined. Pour the chocolate mixture into the prepared baking pan; set aside.

Prepare the cheesecake by beating the softened cream cheese, sugar, egg yolk, and vanilla extract together with a mixer until creamy and smooth with no lumps.

Drop spoonfuls of cheesecake batter into the brownie batter. Using a knife, swirl the two batters together until you get a marbled look.

Sprinkle the top with chocolate chips.

Place into the oven and bake for 30-35 minutes. Remove from the oven and allow to cool for 2 hours before slicing. (Refrigerate to speed up the process if needed). Serve with ice-cold milk. Enjoy.

  • 3 oz bittersweet chocolate, chopped
  • 1 cup white sugar

Cheesecake:

  • 8 oz cream cheese, softened to room temperature
  • cup white sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract
  • cup semi-sweet chocolate chips (sprinkle on top before baking)
