Glazed Almond Cookies

My son recently mentioned to me that he loved the flavor of almonds but didn’t necessarily care for almonds themselves. This got me looking for an almond-flavored treat without a ton of actual nuts in it, and I found a recipe for glazed almond cookies on The Girl Who Ate Everything that looked perfect and super simple to make. The key to this recipe is to add the flour mixture to the butter mixture a couple of tablespoons at a time, otherwise, the dough is very hard to incorporate. These soft glazed cookies had a wonderful almond flavor and just a touch of sliced almonds for a nice bit of texture. My son really LOVES these cookies and is looking forward to this week’s school lunch treat. The rest of us also think they are delicious…especially with a glass of ice-cold milk!

How to Make Glazed Almond Cookies

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.

Make the cookies by beating the butter, sugar, and almond extract with a mixer until creamy and smooth.

In a separate bowl, whisk the flour, baking powder, and salt until well combined.

Add the flour mixture to the butter mixture 2 tablespoons at a time until completely combined.

Drop tablespoon-sized balls on the cookie sheet a few inches apart. Flatten them slightly with the palm of the hand.

Glazed Almond Cookies

Place into the oven and bake for 7 minutes, they will not look done. Remove from the oven and immediately place a few almond slices on each cookie. Allow the cookies to cool for a few minutes on the baking sheet before moving them to cool completely on wire racks.

Make the glaze by combining the powdered sugar, almond extract, and milk together until creamy and smooth.

Once the cookies have cooled completely, place the rack of cookies over parchment paper and drizzle frosting with a spoon on top of each cookie, to taste. Let cookies sit until the icing has set. Store sealed in the refrigerator. Enjoy!

Almond Cookies:

  • 1 tsp almond extract

Almond Glaze:

  • ¾ cup powdered sugar
  • ½ tsp almond extract
  • 4-5 tsp milk to taste

    These cookies are delicious. I followed the recipe exactly with one exception. I used half unsalted butter and half plant butter. I found the recipe a little sweet for me personally, but I think most people would be fine with this recipe. It is simple and definitely a crowd pleaser.
