Marinated Tomatoes with Mozzarella

I can’t believe I have never thought to marinate my tomatoes before! These tomato slices were the perfect side dish for dinner on this busy and HOT 90-degree day. I didn’t want to heat up the house too much so a cold side dish was a must when I was planning dinner. I ran across a recipe on eatwell101 that sounded delicious and it was. These marinated tomatoes with mozzarella disappeared quickly and all of us thought they were delicious. The herbs gave such a great flavor and the balsamic added the perfect amount of tangy-sweet goodness and I loved the creamy bits of mozzarella. If you have a ton of fresh garden tomatoes – try marinating them!

How to Make Marinated Tomatoes with Mozzarella

Cut the tomatoes into thick slices and arrange them in a single layer in a large shallow dish.

Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.

Pour the vinaigrette evenly over the tomato slices. Cover with plastic wrap and set aside on the counter for 1-2 hours.

Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.

Ingredients

  • 4-5 tomatoes sliced thickly
  • ¼ cup olive oil
  • 2-3 tbsp balsamic vinegar to taste
  • 1 tbsp shallot finely diced
  • 1 tbsp fresh parsley finely diced
  • 1 tbsp fresh basil finely diced
  • 1 tbsp fresh oregano finely diced
  • ½ tsp honey more if desired
  • Sea salt and freshly cracked pepper to taste
  • Mozzarella cut into bits

Instructions

  • Cut the tomatoes into thick slices and arrange them in a single layer in a large shallow dish.
  • Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
  • Pour the vinaigrette evenly over the tomato slices.

  1. It’s been cold here for 3 weeks. Still, I love tomatoes and your tomatoes look like a great reason to grow more next summer. I’m sure it was a wonderful side.
