Watermelon Lemonade

Watermelon Lemonade

It seems that whenever I buy watermelon, most gets devoured while the other portion gets soggy in the container and nobody wants to eat it. I can’t be upset because I only like fresh and crisp watermelon too. This happened recently and I decided to make some lemonade with it. I blended the watermelon very well then strained it through a cheesecloth. I mixed the watermelon juice with fresh lemon juice and a bit of water. The watermelon juice was so sweet on its own, I only had to add a couple of tablespoons of sugar – I love that! My son and his buddy enjoyed the lemonade a lot and had fun turning the rest into popsicles. I will never waste soggy watermelon again!

How to Make Watermelon Lemonade

Blend the pieces of watermelon in a blender on high until well pureed. Pour the pureed watermelon through a fine-mesh strainer lined with a cheesecloth into a pitcher. Gather up the sides of the cheesecloth and squeeze to remove all watermelon juice. Discard excess pulp and cheesecloth.

Add the water and fresh lemon juice. Taste and add sugar as needed depending on the sweetness of the watermelon. Pour over ice and serve with lemon wedges. Enjoy!

Side Note: To make popsicles, simply pour the well-shaken watermelon lemonade into either popsicle molds or plastic ice pop molds, seal, and freeze. Enjoy!
