Roasted Fig Crostini with Goat Cheese and Honey

Roasted Fig Crostini with Goat Cheese and Honey

I had some ripe figs that were ready to be used up so I decided to make an appetizer lunch for my kids and me. I roasted the fig slices for a while until they were sweetened and warm. I sprinkled some crumbled goat cheese on top of some toasted slices of baguette then topped the cheese with some roasted figs and a drizzle of honey. It was delicious! My daughter and I loved the sweetened figs with the creamy flavorful cheese and the crisp crostini. My son wasn’t a huge fan of the figs – he said the texture was weird for him, so he settled for the goat cheese, baguette, and a drizzle of honey. I didn’t mind – more roasted figs for me!
