Fresh Herb and Feta Crusted Salmon

We all love salmon and eat it at least once a week. I usually do our standard Salmon with Garlic, Lemon, and Dill but this time I wanted to switch it up a bit. I decided to rub garlic all over the top then I added lemon juice. After seasoning it well with sea salt and freshly cracked pepper, to taste, I sprinkled the top with freshly chopped dill and parsley followed by some feta cheese. I baked it in a HOT oven for 10 minutes and it turned out absolutely perfect. Medium rare, tender, healthy, and so flavorful. We all loved it and ate every single bite. I served this salmon with lemon wedges on the side, some Roasted Tomatoes with Pesto and Parmesan, and Garlic Rice.

How to Make Fresh Herb and Feta Crusted Salmon

Preheat the oven to 500 degrees. Line a baking sheet with tin foil (for easier clean up) then coat it with cooking spray.

Rub the minced garlic all over the salmon then squeeze the juice of a small lemon all over. Season with sea salt and freshly cracked pepper, to taste.  Sprinkle the top with some chopped parsley, fresh dill, and feta cheese.

Place into the oven to bake for 10 minutes or until the salmon flakes easily with a fork and is medium-rare. Don’t overcook! Remove from the oven and serve with additional slices of lemon if desired. Serve immediately.  Enjoy.

Yield:

Cook Time: 10 minutes 

Ingredients:

1 lb salmon fillet
1 large clove of garlic, minced
Juice from 1 small lemon
Sea salt and freshly cracked pepper, to taste
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped
2 tbsp feta cheese
Lemon wedges for serving
