Peach and Burrata Salad

The peaches looked especially delicious while grocery shopping so I picked up a couple. I had some mixed baby kale, radicchio, and arugula at home along with some burrata cheese. I tossed the greens in a balsamic vinaigrette then added some peach slices and bits of burrata cheese. I drizzled a bit of balsamic glaze on top before serving. The bitter greens mixed with the sweet balsamic and peaches were a match made in heaven! The creamy cheese made this beautiful and delicious salad even better.

How to Make a Peach and Burrata Salad

Combine the olive oil, vegetable oil, balsamic vinegar, dijon mustard, honey, and sea salt, and freshly cracked pepper, to taste, in a large salad bowl. Whisk until well combined. Add the mixed greens to the bowl then toss to coat evenly. Top with peach slices and bits of the burrata cheese. Drizzle the top with a touch of balsamic glaze, to taste. Season with a touch of sea salt and freshly cracked pepper, to taste, if desired. Serve immediately. Enjoy.

Yield:

Total Time: 10 minutes

Ingredients:

1 tbsp olive oil
1 tbsp vegetable oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1/2 tsp honey
Sea salt and freshly cracked pepper, to taste
Mixed greens, I used a baby kale, arugula, and radicchio mix
1-2 peaches, sliced
Burrata cheese, cut into bits, to taste
Balsamic glaze, to taste

  1. Love summer fruit! And we’ve been seeing some good peaches. Don’t often use them in salads, but like the idea, a lot. This is terrific! Such a nice combo of flavors. Thanks!

  2. What a coincidence! We had tomato salad over burrata cheese tonight. My CSA gave me the little gold pear tomatoes this week and I had recently bought some burrata ( not always easy ti find) and made a tomato basil salad to serve over it. I bet it is delicious with peaches. I am still waiting for organic peaches to come into my market and will definitely try this combo.

  3. since i’ve only recently become obsessed with fresh mozzarella, i haven’t even sampled burrata yet, though it’s high on my to-do list. this salad sounds perfect for my tastes!
