Baked Shredded Beef, Bean, Extra Sharp Cheddar and Jalapeno Taquitos

We had friends over for dinner last night and I made Shredded Beef Soft Tacos for dinner. I had a ton of all the taco fixings leftover so I decided to use them up by making these baked shredded beef, bean, extra sharp cheddar, and jalapeno taquitos. They were tender and full of flavor inside and crispy on the outside. I like baking my taquitos instead of frying them because they turn out crispy and delicious without being greasy. These taquitos made a tasty dinner that we all enjoyed and helped me get rid of the leftovers.

How to Make Baked Shredded Beef, Bean, Extra Sharp Cheddar, and Jalapeno Taquitos

Preheat the oven to 400 degrees on a convection setting if you have it. Line a baking sheet with tin foil then place two metal cooling racks on the baking sheet then coat with cooking spray. Side Note: I bake my taquitos on the racks so any juices drip down onto the tin foil instead of making all of the taquitos soggy.

Wrap corn tortillas in damp paper towels for 1 minute in the microwave to soften. Heat the meat until warm in the microwave for about 45 seconds.

Place a small spoonful of refried beans down the center of the tortilla, sprinkle the beans with a bit of extra sharp cheddar, then add shredded beef on top of the cheese. Roll the tortilla tightly.

Place seam side down, on the prepared baking sheet that’s been coated with cooking spray. Finish rolling the rest of the taquitos, then spray each of them with cooking spray.

Place into the oven and bake for 15-20 minutes or until crispy and golden brown.

Side Note: If you don’t have a convection setting on your oven, use the regular setting and flip the taquitos over halfway through the cooking time.
