Blueberry Sauce

We had friends over for dinner recently and I decided to make it fun for the kids by serving waffles for dinner. I had some fresh blueberries in the refrigerator so I made a tasty blueberry sauce to top our waffles. The sauce was filled with juicy blueberries and was absolutely delicious. It would also be fantastic on pancakes, French toast, crepes, or ice cream too. Needless to say, this sauce was gobbled up quickly and everybody loved it.

How to Make Blueberry Sauce

Mix the cornstarch with the water until well combined. Pour the water mixture, blueberries, sugar,  lemon juice, and lemon zest into a pan over medium heat. Cook, stirring occasionally for 4-5 minutes or until thick and some of the blueberries are bursting. Remove from the heat and let cool. Spoon over your waffle, pancake, French toast, crepe, or ice cream. Enjoy.

Cook Time: 5 minutes

Ingredients

  • ½ cup of water
  • 2 tbsp cornstarch
  • 2 cups of fresh blueberries
  • ¼ cup of sugar more if your berries are tart
  • 2 tbsp lemon juice
  • Zest from 1 small lemon

Instructions

  2. I’m so happy to see big boxes of blueberries starting to show up at the market. Just bought two cartons yesterday. This sauce sounds like a wonderful way to utilize some of them. I can think of a zillion ways to use this sauce, it sounds amazing!
