Maple Dijon Asparagus

I wanted a light but flavorful side dish to pair with the Crispy Roasted Mustard and Thyme Chicken Drumsticks and the Creamy Mashed Potatoes I was serving for dinner. I found this wonderful recipe at Food, Faith, and Fitness that sounded amazing. I loved the combination of flavors in this recipe. It was such a quick and easy recipe to make and paired perfectly with the rest of the meal. My kids actually thought it was pretty tasty too – which is a great thing when it comes to asparagus! My husband and I both loved it.

Maple Dijon Asparagus

How to Make Maple Dijon Asparagus

Bring a large pot of salted water to boil. Add the asparagus and cook for 2-3 minutes or until crisp-tender. Remove from the water and plunge into ice water immediately.

Combine the maple syrup, olive oil, Dijon mustard, red wine vinegar, and minced garlic together; mix well.

Heat a skillet over medium heat and coat it with cooking spray. Add the asparagus spears to the skillet along with the maple syrup mixture. Toss to coat evenly and cook until heated through, about 1 minute. Remove from the skillet and serve immediately. Enjoy.

Ingredients

  • 1 small bunch of asparagus wooden stems removed
  • 2 tsp real maple syrup
  • 2 tsp olive oil
  • 2 tsp Dijon mustard
  • 1 ¼ tsp red wine vinegar
  • 1 clove garlic minced
  • Sea salt and freshly cracked pepper to taste

  1. i’m one of those folks who don’t really like the taste of asparagus, but i just so happen to LOVE maple syrup and mustard! you’ve made asparagus infinitely more palatable to me!
