Orzo with Garlicky Roasted Tomatoes and Parmesan

I wanted a simple and tasty side dish to serve with the chicken I was making for dinner. I was craving roasted tomatoes so I decided to serve them tossed in orzo. I poured the cooked and drained orzo directly into the pan I roasted the tomatoes in so it would get flavored by all the garlic and tomato juices. I tossed the orzo with the roasted tomatoes, fresh parsley, and parmesan and simply seasoned it with sea salt and freshly cracked pepper. This orzo with garlicky roasted tomatoes and parmesan will be on regular rotation because it was such a simple and perfect side dish that we all loved.

How to Make Orzo with Garlicky Roasted Tomatoes and Parmesan

Preheat the oven to 400 degrees. Add the grape tomatoes, minced garlic, olive oil, sea salt, and fresh cracked pepper, to taste, in a baking dish. Toss to coat evenly.

Roast in the oven for 10 minutes, stirring them occasionally,  until plump and ready to about to burst. Remove from the oven.

While the tomatoes are roasting, prepare the orzo in a large pot of boiling salted water, per instructions. Drain the orzo, reserving 1/4 cup of the cooking liquid, then pour the pasta directly into the baking dish.

Add the fresh parsley then season with sea salt and freshly cracked pepper, to taste. Toss to coat the orzo evenly with the tomatoes, their juices, and the minced garlic and add reserved cooking water, as needed. Taste and re-season if needed.

Pour into a serving bowl and sprinkle with Parmesan cheese. Serve immediately. Enjoy.

  1. Ok, between your turkey panini and this orzo dish I am so hungry right now! Orzo is one of my favorite pastas, and the colors in this dish are gorgeous! This colors of Christmas and the Italian flag!

    I have made this ^ exact dish for my family for the years and this is always one of their favorite dishes. It is so flavorful, tasty and is great with many dishes or even a quick stand alone depending on your mood or situation. Years later, my adult daughter will now ask me to this for her when she comes home from work/school…she says it’s her comfort home food. My hubby hovers in the kitchen when he starts to smell the oven baking with the garlic, tomatoes and the Orzo boiling up because he knows some good eatin’ is coming soon. Thank you =)
