Fruit Salad with a Citrus Vanilla Sauce

I served this fruit salad with the spicy Asian Chicken Sandwiches I made for dinner recently and they paired nicely together. The sweet and juicy fruit salad cooled down our mouths after bites of the spicy sandwich. I loved this combination of fruit together. The sauce was a combination of orange and lemon juice & zest along with some brown sugar and vanilla. It reduced down to a very flavorful sauce that topped the fruit perfectly. We all, kids especially, loved this fruit salad.

How to Make a Fruit Salad with a Citrus Vanilla Sauce

Heat a small saucepan over medium heat. Add the brown sugar, orange juice, lemon juice, clementine zest, lemon zest, and vanilla. Cook, stirring often, for about 5 minutes. Set aside and let it cool down completely.

Prepare the fruit and combine it in a large bowl. Once the citrus vanilla sauce has cooled down, drizzle on top of the salad, to taste. Toss gently and serve. Enjoy.

Fruit Salad with a Citrus Vanilla Sauce

Ingredients

  • Citrus Vanilla Sauce:
  • cup fresh orange juice
  • 2 tbsp brown sugar
  • 2 tbsp fresh lemon juice
  • ½ tsp grated clementine zest
  • ½ tsp lemon zest
  • ½ tsp vanilla extract
  • Fruit Salad:
  • 2 cups strawberries hulled and sliced
  • 1 cup fresh pineapple chopped into bite-sized chunks
  • 1 cup fresh blueberries
  • ½ cup of fresh raspberries
  • 1 kiwi fruit peeled and sliced
  • 1 banana sliced
  • 1 clementine peeled and sectioned
  • 2 tbsp pomegranate seeds

Instructions

  1. I love fruit salad.. especially now that we are going to see our first 100 degree day today… I could use a nice big bowl of that to help ease the pain of the heat!!!

  3. What are you referring to when you say

    2 tbsp cup of brown sugar. Is it 2 tbsp or a cup. Have not seen this before. I love the recipe and would love to try it with the vanilla.
