Chicken and Avocado Caprese Open Faced Sandwich

Kudos to my sister who inspired me to make this sandwich.  I used the leftover Balsamic, Garlic, and Basil Chicken along with fresh avocado, tomatoes, basil, and mozzarella to make this delicious open-faced sandwich.  My kids had friends who were spending the night and they all seemed to enjoy it and my husband and I really, REALLY loved it.  The tender chicken was delicious on top of the roasted garlic bread and I loved the texture the soft avocado gave to this sandwich.  Of course, the tomato, basil, and mozzarella topped this amazing open-faced sandwich off perfectly.  I highly recommend you try this recipe!  Thanks for the inspiration, Dana!!!

How to Make a Chicken and Avocado Caprese Open-Faced Sandwich

Prepare the Balsamic, Garlic, and Basil Chicken.  Slice into thin slices.

Preheat the oven to broil.  Line a baking sheet with tin foil.

Lay the sliced roasted garlic bread on top of the baking sheet and place it into the oven.  Cook, watching carefully until the tops are browned.  Spread mayonnaise on top of each slice of bread followed by slices of chicken, avocado, tomato, fresh basil, and mozzarella cheese.

Place back into the oven and cook, watching carefully, until the cheese melts.  Remove from the oven and sprinkle the top with chopped basil before serving.  Enjoy.

  • 7 slices of roasted garlic rustic bread or bread of your choice
  • Mayonnaise
  • 2 leftover chicken breasts sliced (see chicken recipe link above)
  • 2 avocado sliced thinly
  • 2 to matoes sliced thinly
  • Fresh basil leaves torn
  • Fresh mozzarella sliced thinly

Instructions

  • Prepare the Balsamic, Garlic, and Basil Chicken (see link above). Slice into thin slices.

    Although you did them better than I by adding in the chicken.
    I’ve been so lazy this summer in terms of baking.
