Pan Grilled Asparagus with Lemon Shallot Vinaigrette

I found this recipe on Kitchen Daily and it sounded perfect for my family.  It was simple, quick, and delicious.  Both of my kids LOVED the vinaigrette and said it actually made asparagus taste good… they don’t care for asparagus.  My shallots were a touch strong when I diced them so I soaked them in ice-cold water for a few minutes to mellow out the flavor.  The vinaigrette was simple yet flavorful and it paired really nicely with the grilled asparagus and Parmesan cheese.  This side dish will be a regular in my house – especially if it makes my kids like asparagus!

How to Make Pan Grilled Asparagus with Lemon Shallot Vinaigrette

Combine the olive oil, lemon zest, lemon juice, shallot, garlic, sea salt, and freshly cracked pepper together with a whisk until well combined.  Set aside to let the flavors mingle.  Side Note:  If your shallot’s flavor is too strong, soak in cold water for a few minutes prior to making the vinaigrette.

Heat a grill pan over medium heat; coat with cooking spray.  Place the asparagus into the grill pan and season with sea salt and freshly cracked pepper, to taste.  Cook the asparagus for 3-4 minutes then flip and cook for another 2-3 minutes or until tender.

Toss the asparagus with some of the lemon vinaigrette then place it onto a serving platter and sprinkle it with Parmesan cheese.  Serve the asparagus with the remaining sauce on the side.  Enjoy.

  2. Hi Pam! I always love finding new ways to eat asparagus. The kids are so OD’d on asparagus because I have been serving it up so much this spring. I think this might be the perfect way to change it up a bit and get them excited to eat it again.

    I love hearing how your kids like or dislike dishes because it gives me a clue as to whether or not my kids will like that particular recipe.

  3. Sounds very good! I want to try grilled asparagus this summer sometime. Someone was telling me how good it is that way. I like the sound of the vinaigrette too!

  4. I love the tip on the shallot. I hate when I get a strong onion/garlic/shallot and you are afraid to use it because it is so odoriferous.
