Caprese Baked Eggs

This is my new favorite breakfast. I know I say that a lot, but I really, really, mean it this time. This is a quick and simple recipe to prepare and it tasted so delicious! I loved the flavor of the basil with the cooked tomatoes and the over-easy egg. I served my egg with a piece of rustic bread for dipping into the yolk. I highly recommend this healthy recipe.

Caprese Baked Eggs:

Ingredients:

  • Cooking spray
  • Mozzarella cheese
  • 2-3 grape tomatoes sliced in half
  • Fresh basil, chiffonade
  • 1 egg
  • 1 tsp milk or heavy cream
  • Sea salt and freshly cracked pepper, to taste

How to Make Caprese Baked Eggs

Preheat the oven to 350 degrees. Coat a small ramekin with cooking spray.

Place a couple of tomatoes, some mozzarella cheese, and basil into the ramekin. Crack an egg into the ramekin, being careful not to break the yolk. Add the milk, a few more tomatoes, a little more mozzarella, and basil to the top. Season with sea salt and freshly cracked pepper, to taste.

Caprese Baked Eggs

Place onto a baking tray and cook for 5 minutes; Turn the oven to broil and cook for another 5 minutes or until the whites are set but the yolk remains soft. Remove from the oven and serve immediately. Enjoy.

  50. I love these eggs in the ramekins, they are truly delicious! A good switch from boring old scrambled or fried eggs. I’m having some issues with the cooking time though – I double the broiling time and the whites STILL aren’t set, and the yolk is even cooked a little. Should I lengthen the baking time instead?       I would increase the baking time by 2 minutes to start with. See if that helps.
