Cinnamon, Oatmeal, Raisin, and Walnut Cookies

I wanted to make some cookies for a friend so I used this recipe I found on Smitten Kitten. It was a super quick and easy recipe to make and they smelled so good while they baked. My daughter and son taste tested them for me (tough job) and they said they were soft, chewy, and delicious. They brought a smile to my friend’s face which is what I wanted.

Cinnamon, Oatmeal, Raisin, and Walnut Cookies:

Ingredients:

  • 1/2 cup of unsalted butter, softened
  • 2/3 cup light brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup of all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 cups of rolled oats
  • 1/2 cup raisins
  • 1/2 cup of walnut pieces

How to Make Cinnamon, Oatmeal, Raisin, and Walnut Cookies

Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

In a large bowl, cream together the butter, brown sugar, egg, and vanilla until creamy and smooth. Whisk the flour baking soda, salt, and cinnamon together in a separate bowl. Slowly add the flour mixture to the butter and sugar mixture. Stir in the oats, raisins, and walnuts then mix until combined.

Place dough by the spoonful onto the silpat mat. Bake in the oven for 10-12 minutes or when the cookies are golden at the edges. Let the cookies sit for a minute before moving them to a rack to cool.

  1. I did not like these. They were dry, not rich enough, and did not spread like a typical cookie. They may be low cal but not delicious.

  2. I love this recipe! It’s easy to follow and I loved the taste of them when I finished baking them. I’m sure ill use this recipe again and again.
