Pork Medallions with Cider SauceI saw this tasty-looking recipe on the Noble Pig’s site a couple of years ago and I finally decided to give it a try and I am so glad I did. This was such a quick and easy recipe to make and it tasted wonderful! The pork was tender and juicy while the sauce was a bit sweet and so flavorful. This was a big hit with the whole family and we gobbled up every last bite. Thanks for a great recipe, Cathy!

Pork Medallions with Cider Sauce:

Ingredients;

  • 2-3 tsp olive oil
  • 1 pork tenderloin, cut into thick medallions
  • Sea salt and freshly cracked pepper, to taste
  • Sage, to taste
  • Garlic powder, to taste
  • 1 cup of apple cider
  • 1/3 cup of chicken broth
  • 1 tbsp apple cider vinegar

Pork Medallions with Cider Sauce

How to Make Pork Medallions with Cider Sauce

Heat the olive oil in a large skillet over medium-high heat.

Remove the silver skin from the pork tenderloin, then cut into same size medallions. Season both sides of the medallions with sea salt, freshly cracked, pepper, sage, and garlic powder, to taste.

Place into the hot skillet and cook for 4-5 minutes on each side or until golden brown. Remove the pork from the skillet and set it aside on a plate then cover with a tinfoil tent.

Add the apple cider, chicken broth, and vinegar to the skillet. Cook on medium for 4-5 minutes or until the sauce has thickened up nicely and reduced. Taste the sauce and season with sea salt and freshly cracked pepper, to taste.

Add the pork back to the skillet along with any juices from the pork. Toss the pork to coat evenly in the sauce. Serve immediately with the remaining sauce drizzled over the top. Enjoy.

  1. I really enjoy the flavor of pork with apples. This sounds great. When my grandpap makes homemade apple butter, I enjoy making it into glazes and using it for flavoring.
