Beef, Black Bean, and Chorizo Chili

Beef, Black Bean, and Chorizo ChiliIt took a few days of resting but I am finally feeling better. We had friends over for Halloween night and I wanted to serve something warm and comforting after a long night of Trick or Treating. I was inspired by Chris at Nibble Me This when I saw his delicious-looking Beef and Chorizo Chili. I used my base recipe for Chili but added ground beef, chorizo, and black beans. It simmered in the oven all day long and made my house smell so unbelievable. It was thick, hearty, spicy and so delicious. I served it with shredded cheddar cheese, green onion, and sour cream. It was a big hit with all the adults and my son. I will be making this chili often…thanks for the inspiration, Chris.

 Beef, Black Bean, and Chorizo Chili:

Ingredients:

  • 2 tsp olive oil
  • 1 lb lean ground beef
  • 6 oz pork chorizo, casing removed
  • 1 medium onion, diced
  • 1/2 orange bell pepper, diced
  • 1 jalapeno, diced
  • 8 cloves of garlic, chopped
  • 2 tsp cumin powder
  • 3 tbsp chili powder
  • 1 tsp black pepper
  • 2 tsp salt
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes
  • 1 tsp sugar
  • 2 (15 oz) cans diced tomatoes
  • 2 (15 oz) cans of tomato sauce
  • 2 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) kidney beans, rinsed and drained
  • 1 (7 oz) can of whole green chiles, diced
  • 2 tbsp vinegar

How to Make Beef, Black Bean, and Chorizo Chili

Preheat your oven to 250 degrees.
Heat olive oil in a large Dutch oven over medium heat. Once the pot is hot, add ground beef and chorizo (casing removed) cook for 2-3 minutes, stirring occasionally then add onion, bell pepper, jalapeno, and garlic.
Sauté for about 3-4 minutes before adding all spices; stir to combine. Add the tomatoes, tomato sauce, beans, green chiles, and vinegar, stir then cover with a lid and place in the oven.
Cook for 4-6 hours, stirring throughout the day if you can.
Top with cheddar cheese, green onions, and sour cream, if desired. Enjoy.

    I need to make me some chili. The evening are pretty cool here and it seems to be the perfect dish to cook up on these types of night. Yum!!

  3. I can imagine the smell that must have enveloped your home! I adore all of the spices that you've added to this hearty chili, all of which should keep you on the path to recovery. I'm glad you're feeling better!

  4. This looks really yummy and just nice for a cold evening supper. All you would need is probably a loaf of crusty bread to dip into this.

    and that you're feeling better! i made your black bean & chorizo soup over the weekend. it was SO GOOD! i added 2 small cans of green chiles but that was my only deviation. and now i know i'll be making this chili. thank you!

  6. Pam, it is definitely 'chilly’ weather, pun intended. I am sure your guest had that welcoming feeling upon their return Trick or Treating, smelled your chili simmering on the stove. I have never used Chorizo sausage in my chili, but I’m sure it gives it a nice spicy twist.

  7. I too find that my family is much more inclined to enjoy Halloween dinner when it's something simple. That, of course, is the only day of the year when it's "Free Range Candy Grazing"!

  14. Oh my goodness, looks so delicious and comforting. It's JUST now getting cooler by me so maybe I can start making soups and hot stuff!

  15. I just made this and it is as delicious as it sounded. It can feed an army though, I froze half.

    I served it with some baked squash on the side, that I basted with some maple chipotle sauce, went very well with the chili.
