Cherry Galette

I made this cherry galette for dessert last weekend and it was a big hit with the whole family. Making a rustic galette is so easy and it’s are a terrific way to use up fresh fruit you have on hand. I love that this recipe only has a few ingredients and that the fresh cherries were already so sweet I didn’t need to add much sugar. To make this recipe extra easy, I used a pre-made pie crust but homemade is great too. I served slices of this warm cherry galette with vanilla ice cream and it was amazing! My daughter absolutely loved this dessert.

How to Make a Cherry Galette

Preheat the oven to 375 degrees. Line a baking sheet with a silpat mat. Roll out the pre-made pie crust onto the center of the slipat mat.

Split the vanilla bean pod in half with a knife. Using the back of the knife, scrape the inside of the vanilla bean pod to remove the seeds. Add the seeds to the white sugar in a bowl. Using your fingers, mix the vanilla beans into the sugar until well combined.

Place the cherries into a bowl and sprinkle the vanilla sugar and cornstarch on top. Gently stir the fruit until the sugar and cornstarch are evenly covering them.

Place the cherry halves in the center of the dough. Fold the edge of the dough over the fruit. Brush the dough with the beaten egg. Sprinkle the edges with the raw turbinado sugar.

Place into the oven and for 40-45 minutes, or until golden brown.  Remove the galette from the oven and let cool for 5-10 minutes before slicing. Serve plain, with whipped cream, or vanilla ice cream. Enjoy.

  • 1 pie crust

  • 2 tbsp white sugar more or less depending on the sweetness of the fruit
  • 2 cups sweet cherries pits removed and sliced in half
  • 2 tsp cornstarch
  • 1 egg beaten
  • Raw turbinado sugar

  1. I like making galettes for dessert also. So much easier than a pie and you don’t have an over abundance of it Love cherries going to have to get some to make your recipe.

  2. You can brush the edges of your pie or galette with heavy cream, also, and the turbinado sugar will stick and be beautiful. This looks like a great way to go when you don’t have enough fruit for a huge pie! I’ll bet your cherry galette was delicious.

  3. i got a massive bag of cherries at the store because I LOVE THEM and THEY WERE ON SALE but i noticed that some are getting moldy so i need to take action now! love the idea of a galette!
