Chocolate Peanut Butter Cookie Cups

My kids wanted some sort of cookie or brownie for this week’s school lunch treat. I had a package of miniature chocolate peanut butter cups and thought they would be fun to make cookie cups out of. They took a little longer to make because I had to refrigerate the dough to harden, but they were worth it. My kids came home with big smiles when they saw these chocolate peanut butter cookie cups on the counter. My kids absolutely love them and they’ve been a big hit with their friends who visit the house, too.

How to Make Chocolate Peanut Butter Cookie Cups

Preheat the oven to 375 degrees.

Combine the flour, baking soda, and salt together in a bowl; set aside.

In another bowl, cream together the butter, white sugar, brown sugar, and peanut butter together until creamy. Add the egg and vanilla and beat until well combined.

Add the flour mixture to the butter mixture and stir until combined. Cover and place into the refrigerator for 30 minutes, or until the dough is hardened and easier to handle.

Coat 2 mini muffin tins with cooking spray. Shape dough into 20 same-sized balls and place one in each muffin cup. Don’t flatten!

Place into the oven and bake for 8-10 minutes, or until puffed up and lightly browned.

While they are baking, remove the wrappers from the miniature peanut butter cups.

Remove from the oven and immediately press the peanut butter cups in the center of each cookie. Cool completely in the muffin pan. Enjoy!
