Pepperoni Pizza Potato Skins

I am making some Baked Potato Soup for dinner tonight so I decided to make some potato skins for my kids’ after-school snack today. I baked the potatoes then scooped out the potato filling. After baking the skins for a few minutes to crisp up, I filled them with some leftover marinara sauce then topped them with mozzarella cheese, mini pepperoni slices, and some parmesan cheese. I baked them until they were hot and the cheese was gooey. My kids loved these potato skins, even my son who doesn’t care too much for pizza, thought they were terrific. These pizza potato skins were a fun and tasty after-school snack that had my kids happy and smiling.

How to Make Pepperoni Pizza Potato Skins

Preheat the oven to 400 degrees. Rub the clean potatoes with a bit of olive oil then sprinkle them with salt evenly. Place into the oven and bake until tender, about 1 hour. Remove from the oven and let them cool. Slice in half lengthwise then scoop out the potato filling. Rub a bit more olive oil on the outside and inside of the potato halves then season with a bit more sea salt. Place them, skin side up, on the baking sheet and bake for 4-5 minutes or until crispy.

Remove from the oven and spoon in some marinara sauce then top with mozzarella cheese, mini pepperoni slices, and parmesan.

Place back into the oven and bake for 5-7 minutes or until the cheese is gooey. Remove from the oven and sprinkle the top with chopped parsley. Serve immediately. Enjoy.

Ingredients

  • 3 russet potatoes cleaned
  • Olive oil
  • Sea salt to taste
  • Marinara sauce
  • Mozzarella cheese shredded
  • Mini pepperoni slices
  • Parmesan cheese shredded
  • Fresh parsley chopped

  1. I LOVE potato skins in any way, shape, or form, Pam! I even like them made into little pizzas and dare I say, I’m with your son when it comes to Pizza. I can leave it, lol…

    GREAT idea though. I’m sure the kids were thrilled to come home to such a fun (and healthy) snack. I bet that Potato Soup was yummy too. I hope you’ll be sharing:) I’ll be pinning:)
