Shrimp Stir Fry with Asparagus and Grape Tomatoes

I had my son in mind when I made this dish. He loves seafood and he loves anything with soy sauce. I picked up some fresh shrimp from our grocery store along with asparagus and tomatoes and I decided to do an Asian stir fry. This dish comes together in 10 minutes and is delicious served over Sesame and Garlic Basmati Rice. We all loved it, especially my son and husband who gobbled up every last bite.

Combine the soy sauce, rice vinegar, minced ginger, minced garlic, and sesame oil together in a bowl. Whisk until well combined.

Heat the vegetable oil in a large sauté pan over medium high heat. Add the asparagus and tomatoes and cook, stirring occasionally for 5 minutes. Add the shrimp and cook for 2 minutes, flipping halfway until nearly cooked through. Add the soy sauce mixture and cook, stirring often, for 1-2 minutes. Serve immediately with rice. Enjoy.

Shrimp Stir Fry with Asparagus and Grape Tomatoes

Yield: 4

Total Time: 10 min.

Ingredients:

2 tbsp soy sauce
1 tbsp seasoned rice vinegar
1 tbsp fresh ginger, minced
3-4 cloves of garlic, minced
1 tsp sesame oil
1 tbsp vegetable oil
1/2 lb asparagus, trimmed and cut diagonally into 2-inch pieces
1 cup grape tomatoes
1 lb large shrimp, cleaned and deveined
Green onions, chopped

Directions:

Combine the soy sauce, rice vinegar, minced ginger, minced garlic, and sesame oil together in a bowl. Whisk until well combined.

Heat the vegetable oil in a large sauté pan over medium high heat. Add the asparagus and tomatoes and cook, stirring occasionally for 5 minutes. Add the shrimp and cook for 2 minutes, flipping halfway until nearly cooked through. Add the soy sauce mixture and cook, stirring often, for 1-2 minutes.Sprinkle with chopped green onions. Serve immediately with rice if desired. Enjoy.

    This isn’t that dissimilar to our traditional Christmas Eve dinner – except that I use plenty of garlic, no soy sauce, and spinach in lieu of asparagus. This looks like a great dinner, Pam!

    YUM! I’ve been craving shrimp since the last time you posted a shrimp recipe. I usually choose more frugal options, but once in awhile can’t hurt right? I can’t think of anything better to pair it with than asparagus. Thanks for another great recipe.
