Caprese Salad Stuffed Avocado

I had a ripe avocado to use up and I was craving a caprese salad so I decided to combine the two. I am so glad I did! This was seriously delicious and healthy too. I loved how beautiful it looks and loved the flavors and textures were terrific. I love that a quick and simple recipe can be so gourmet. I highly recommend you try this one!

Combine the tomatoes, mozzarella, and basil together in a bowl. Drizzle with the olive oil and a bit of balsamic vinegar and season with sea salt and freshly cracked pepper, to taste. Toss to mix well. Slice the avocado in half then remove the pit with a knife Рclick here for instructions. Spoon the caprese salad equally into the avocado halves. Drizzle with more balsamic vinegar right before serving. Enjoy.

1/2 cup of grape tomatoes, sliced in half
1/4 cup of mozzarella, cut into bits
1 tbsp fresh basil, chopped
1 tsp olive oil
2 tsp balsamic vinegar, more for drizzling when serving
