Baked Egg with Sausage, Mushroom, and Basil Marinara on Toast

Baked Egg with Sausage, Mushroom, and Basil Marinara on Toast

This recipe was inspired by a fellow food blogger, Larry, who makes the most amazing breakfasts with his leftovers. I had leftover bread and marinara sauce from the pasta dinner we had last night. Instead of pasta with the sauce for lunch, I decided to bake an egg on top of the marinara sauce then serve it on top of a piece of toast. It was super simple to make and took only 15 minutes to make. The toast with the soaked up the marinara and the egg on top with Parmesan and basil tasted fantastic. I have a feeling I will be having this for lunch again tomorrow.

  1. made a baked egg recipe last week, they’re so easy, quick and delicious! I used smoked mackeral and spinach but this sounds like a great way to use up all the left over pasta sauces we have in our house

  2. Larry does make some pretty fine breakfasts with his leftovers… you might be giving him a run for his money today though!!!

  3. Who is this Larry that you speak of? ha ha
He is the king of breakfasts but you are royalty too, creating dishes like this one, Pam. I like the acidity the marinara brings to this.
