Mixed Greens with Rainier Cherries, Nectarine, Feta Cheese and a White Balsamic Vinaigrette

Words cannot describe how much I loved this salad.  The cherries, nectarines, and pomegranate seeds gave it such a lovely sweet flavor while the feta gave it a salty flavor and the white balsamic vinaigrette tied it all together beautifully.  I served this salad with the Shrimp Scampi and we gobbled it right up.  I’ll admit it… I went back for seconds of this salad.  Give this salad a try if you want a nice and light salad that is full of great flavors and textures.

Combine the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt and freshly cracked pepper, to taste together in a small bowl.  Whisk until well combined.  Set aside.

Combine the mixed greens with the sliced cherries, nectarines, pomegranate seeds, and feta cheese.  Drizzle it with the balsamic vinaigrette and toss until well combined.  Serve immediately.  Enjoy.

Side Note:  You may have some vinaigrette leftover.  Seal with a lid and place into the refrigerator.
