German Pancake Topped with Cinnamon and Sugar

My husband and I went to see one of my very favorite singers, Greg Laswell, in Portland on Saturday night.  The concert was in a great little venue called Mississippi Studios and we had prime seats in the balcony.  The show was awesome and Mr. Laswell was even better live than I imagined he would be.  My husband and I were grinning all night long and loved listening to Greg and his fantastic band jam with the talented Elizabeth Ziman.  It was a wonderful date night with my guy & one of the best concerts I’ve ever been too.  If you have an opportunity to see Greg Laswell live – DO IT!

German Pancake Topped with Cinnamon and Sugar

I woke up in a great mood after seeing such a fantastic concert so I decided to spoil my kids and make them a German Pancake.  Instead of topping it with lemon and raspberries, I took the quick and easy route and sprinkled cinnamon and sugar on top.  My kids literally ate this entire pancake (except for one piece I gave to my husband) in less than 7 minutes.  I kept telling them to please slow down but they said it was too good to eat slowly… I guess it was a hit!

Preheat the oven to 425 degrees.

In a mixing bowl, combine the flour, milk, beaten eggs, and grated nutmeg. Beat lightly, making sure to leave the batter a little bit lumpy. Melt the butter in an OVEN PROOF skillet over medium heat. Once the butter has melted, pour the batter into the skillet and bake in the oven for 15-20 minutes, or until the pancake is golden brown.

Combine the brown sugar and cinnamon until mix thoroughly.

Remove the pancake from the oven when it’s finished cooking; sprinkle the top with cinnamon and sugar mixture.

Slice the German pancake and serve immediately.  Enjoy.

Cook Time: 15-20 min.

Total Time: 20-25 min.

Ingredients:

1/2 cup of flour
1/2 cup of milk

Dash of fresh nutmeg, grated
3 tbsp butter
2 tbsp brown sugar
2 tsp cinnamon

Directions:
