Garlicky Asparagus with a Splash of Lemon
I had a bunch of asparagus to use up so I decided to make a quick and simple side dish with it. I steamed it for a bit then sautéed garlic chips in garlic olive oil before adding the asparagus to the pan. I seasoned the asparagus with sea salt and freshly cracked pepper and a splash of lemon right before serving. It was healthy and delicious – sometimes simple food is the best food!
Heat a 1/4 cup of water in a small skillet over medium heat. Add the asparagus to the pan and cover with a lid. Steam the asparagus for 3-4 minutes, or until fork tender.
Remove the asparagus and water from the skillet then add the garlic olive oil. Once the olive oil is hot, add the garlic chips and cook, stirring constantly, for 1 minute. Add the asparagus to the pan then toss to coat evenly. Season with sea salt and freshly cracked pepper, to taste and a splash of lemon juice. Serve immediately. Enjoy.
