Berry Parfait with Homemade Vanilla Bean Whipped Cream and Crushed Oreo Cookies

Berry Parfait with Homemade Vanilla Bean Whipped Cream and Crushed Oreo Cookies

I made my kids’ a berry parfait with homemade vanilla bean whipped cream and crushed oreo cookies this week and they LOVED it.  Honestly, I was really jealous that they got to eat it and I didn’t.  If only my metabolism worked as fast as theirs does.  Sigh. Anyway, I made homemade vanilla bean whipped cream and layered it in a small trifle dish topped with crushed Oreo cookies and berries.  They thought it was super delicious.  They also thought I was an awesome mom too.  You can’t beat that!

How to Make a Berry Parfait with Homemade Vanilla Bean Whipped Cream and Crushed Oreo Cookies

Pour the whipping cream into a bowl, and add powdered sugar until the cream is at your desired degree of sweetness (I used 2 tablespoons). Gently remove the seeds from the vanilla pod and place them into the whipping cream. Using a beater, mix on high until the whipping cream is thick and fluffy.

Place a few spoonfuls of the whipped cream into the small trifle dessert dish.  Next layer with some crushed Oreo cookies followed by some raspberries and sliced strawberries.  Repeat the process with whipped cream, crushed Oreo cookies, and berries.  Top with a dollop of whipped cream and serve immediately.  Enjoy!
