Light and Tangy Cole Slaw

I found this coleslaw recipe on Epicurious that looked and sounded fantastic.  I adapted it a bit to work with what ingredients I had on hand and it turned out really delicious.  I loved the sweet and tangy sauce on the crunchy cabbage and carrots. This light and tangy coleslaw was wonderful plain and when served on sandwiches.  It’s quick, simple and so tasty!  This will be my new “go-to” slaw recipe.

How to Make a Light and Tangy Coleslaw

Toss the cabbage, carrots, purple cabbage, parsley, and green onions together in a bowl.

In a smaller bowl, combine the vinegar, lemon juice, mayonnaise, sour cream, Dijon, sugar, honey, celery salt, sea salt, and freshly cracked pepper, to taste.  Whisk until well combined.  Pour the dressing over the salad and toss until evenly coated.

Ingredients

Slaw:

  • 2 cups of green cabbage shredded
  • ½ cup of carrots shredded
  • ½ cup of purple cabbage shredded
  • 1 green onion diced
  • 1 tbsp fresh parsley chopped

Dressing:

  • 1 tbsp cider vinegar
  • 1 tsp fresh lemon juice
  • 1 ½ tbsp mayonnaise
  • 1 tbsp sour cream
  • 2 tsp light brown sugar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Dash of celery salt
  • Sea salt and freshly cracked pepper to taste

Instructions

  • Toss the cabbage, carrots, purple cabbage, parsley, and green onions together in a bowl.
  • In a smaller bowl, combine the vinegar, lemon juice, mayonnaise, sour cream, sugar, Dijon, honey, celery salt, sea salt, and freshly cracked pepper, to taste. Whisk until well combined.
  • Pour the dressing over the salad and toss until evenly coated. Serve.

  1. YUM! This cole slaw looks delicious, Pam! I love the addition of the celery salt (most recipes use celery seeds).

  2. It’s hard to find a good creamy cole slaw recipe that still has that tangy element. My favourite application for cole slaw is to pile it on top of pulled pork on a crusty bun.

  5. I just found this recipe, tried it and I love it. My kids ate the cole slaw mainly because the dressing had brown sugar, but hey, I will take it!
