Banana, Coconut, and White Chocolate Chip Muffins

Banana, Coconut, and White Chocolate Chip Muffins

I wanted to do something special for my kids so I made up a batch of these tasty muffins as an after-school snack. I threw in some of my kids’ favorite ingredients – banana, coconut, and white chocolate chips into these muffins. I think nuts would be a fantastic addition too but my kids don’t like nuts in their baked goods. The muffins smelled amazing while they baked and needless to say my kids were thrilled to find the warm muffins waiting for them when they got home from school. These muffins were a huge hit with both of my kids and disappeared quickly.

How to Make Banana, Coconut, and White Chocolate Chip Muffins

Preheat the oven to 350 degrees then coat a muffin pan with cooking spray.

In a large bowl, beat together the butter and sugar until creamy. Add the eggs, bananas, and vanilla then continue beating until well combined.

In a separate bowl, combine the flours, baking soda, and salt together, mix well. Add the flour mixture to the banana mixture and stir until just combined. Add the 3/4 cup of coconut and most of the white chocolate chips then gently mix them into the batter.

Spoon the batter evenly into each muffin tin. Add the last of the white chocolate chips and 1/4 cup of coconut equally to the tops of each muffin.

  2. I found a recipe on justapinch.com that I was going to try, “Banana Chocolate Chip Muffins with Coconut by Jamie Burris If you would care to go take a look.” 🙂 (I always save the recipes I try to my computer complete with pic’s to make it easier to find it again at a later date) but the pic on the recipe was to small to copy so I was going to get one from the net like it and came across your site and this fantastic recipe. I decided to try yours instead. It sounds soo yummy. I’m going to try it but with Almonds or Walnuts like you suggested. Thank you for Posting this recipe!!

  3. The batter was way too dry I had to add1/2 cup milk to make it even workable is it supposed to be that dry?
