Roasted Baby Potatoes with Soy, Butter and ParsleyI needed a good side dish to accompany a roasted pork tenderloin and I was craving potatoes. I parboiled them then tossed them in a bit of soy sauce, butter, pepper, and parsley then roasted them until they were soft and tender. They were fantastic! I love the flavor of soy sauce and butter on rice, vegetables, or potatoes. The potatoes were gone very quickly and everyone raved about them. These roasted baby potatoes with soy, butter, and parsley pair nicely with pork, chicken, fish, or beef and they are so simple to make, delicious to eat, and quick to clean up.

Roasted Baby Potatoes with Soy, Butter, and Parsley:

Ingredients:

  • 10-15 Dutch baby potatoes
  • 2-3 tbsp soy sauce
  • 2 tsp butter
  • 2 tsp olive oil
  • Fresh cracked black pepper
  • 2-3 tbsp fresh parsley, chopped (divided)

Preheat the oven to 350 degrees.

Boil a large pot of water and boil the potatoes for 4-5 minutes. Remove from water and let cool.

Once cooled, slice in half and combine soy sauce, butter, olive oil, black pepper, and 1/2 of the parsley. Mix thoroughly and place in a baking dish that has been sprayed with olive oil cooking spray.

Place in oven and roast for 20-25 minutes. Remove from oven and taste, re-season with sea salt and cracked pepper if needed. Enjoy.

I have seen a similar way of preparing the new potatoes like this with soy by a Japanese woman, I now believe soy and potatoes can taste good together : ) Same as you I like cooking, blogging and photography and then I combined all these interests and have my foodblog : )

  7. Mmm, a new reason for me to stop at our farmers market this week. What a simple combination with great results–I think I will be inspired and do something like this but with olive oil. I even have parsley growing on my deck and climbing over itself to be used! Thanks for the idea.
