Pork Chops with Tomatoes, Caramelized Onions, and Feta Cheese

These pork chops with tomatoes, caramelized onions, and feta cheese are one of my favorite ways to cook pork. We love the combination of flavors and textures in this dish–the tomatoes and caramelized onions are sweet while the feta is a bit salty. Topping the whole dish off with a bit of balsamic vinegar just completes it perfectly. I served these chops with our house salad.

Pork Chops with Tomatoes, Caramelized Onions, and Feta Cheese:

Ingredients:

  • 2 tbsp olive oil, divided
  • 1/2 yellow onion, sliced thinly
  • 3 cloves of garlic, minced
  • 5 thin-cut pork chops
  • 1 handful of red grape tomatoes
  • 1 handful of yellow grape tomatoes
  • Sea salt and fresh cracked pepper
  • 2 tsp balsamic vinegar
  • 2-3 tbsp of feta cheese, to taste
  • 2 tbsp fresh basil, chopped

How to Make Pork Chops with Tomatoes, Caramelized Onions, and Feta Cheese

Heat 1 tbsp olive oil in a large skillet over medium heat. Add onions and a bit of salt then sauté until lightly golden brown and slightly caramelized, about 15-20 minutes. Add minced garlic, stirring frequently for 60 seconds. Remove from pan and set aside.

In the same large skillet, heat the other tablespoon of olive oil over medium-high heat and season the chops with sea salt and freshly cracked pepper, to taste. Make sure the pan is nice and hot before adding pork. Cook for 2 minutes before turning over. Cook for additional 1-2 minutes to the desired degree of doneness.

Remove from heat to a serving platter. Make sure to let pork rest for 3-5 minutes before slicing so it stays nice and juicy.

Add the grape tomatoes and cooked onions to the same skillet then season with salt and pepper to taste. Cook for 3-4 minutes to cook the tomatoes slightly.

Pour the tomatoes and onions on top of the pork, and drizzle the top with balsamic vinegar, to taste. Top with feta cheese and fresh basil. Enjoy!

  2. Oh Pam, what a great combo of flavors! I’ve not cooked with the little tomatoes, so this is my something new for the day! Plus, my son is a huge fan of feta cheese, so this will go on my list. I love pork chops, any thickness will do, and I love them pan fried, grilled, baked, stewed, etc. Great recipe! PS: How’d you like the thunder this morning!

  4. Perfect time for this recipe, as I have a proliferation of yellow cherry tomatoes from the garden. I halved the tomatoes and cooked the onion/tomato mix until the tomatoes were almost stewed. Added a romaine and radicchio salad with red wine vinegarette. The meal was FAB-U-LOUS. Definitely a keeper. How can I save this to Pinterest?
